为了探索不同品种小米吸水率、吸水速率与蒸煮时间之间的关系,对7个谷子品种采用离心沥水法测定了1 h内不同时间的吸水率、吸水速率,采用直接蒸煮试验测定了米粒蒸煮开花时间,通过研究吸水率、吸水速率不同变化曲线、并将其与蒸煮时间进行相关分析及聚类分析。结果表明,7个品种小米0~2 min吸水率曲线急剧上升,2~60 min基本呈2种趋势上升,其中5个品种吸水率变化呈缓慢上升的S型曲线,其余2个品种吸水率变化趋于直线上升。小米2~20 min内的吸水率、吸水速率与蒸煮时间均呈极显著负相关关系,30 min后吸水率与蒸煮时间仍为负相关,而吸水速率与蒸煮时间为正相关。小米吸水特点为前期吸水快,后期吸水慢,每个品种小米2 min吸水率均是吸水率变化陡缓转变的拐点,2 min吸水速率均是吸水速率变化的高峰值,因此小米2 min的吸水率和吸水速率可作为其吸水的2个特征值;由于小米的吸水率与蒸煮时间呈极显著负相关关系,通常蒸煮时间短的类型蒸煮品质好,因此可以把谷子2 min的吸水率或吸水速率作为快速鉴定谷子优良蒸煮品质的方法,也可作为谷子品质育种中蒸煮品质的简单筛选方法。 相似文献

The effect of particle size of hull-less barley (HLB) bran DF on antioxidant and physicochemical properties was investigated. HLB bran and extracted DF was ground by regular and superfine grinding, their particle sizes were determined using laser diffraction method. The results showed that superfine grinding could significantly pulverize DF particles to micro-scale; the particle size distribution was close to a Gaussian distribution. The soluble DF in HLB bran was increased effectively with superfine grinding. Insoluble DF with submicron scale showed increased total phenolic content (TPC), DPPH radical scavenging activity and ferric reducing antioxidant power (FRAP). With particle size reduction, the water retention capacity (WRC), swelling capacity (SC), oil binding capacity (OBC), and nitrite ion absorption capacity (NIAC) were significantly (p < 0.05) increased and the water holding capacity (WHC) had no significant change. A kind of health beneficial DF with higher soluble DF content, WRC, SC, OBC, NIAC and antioxidant activity was obtained using superfine grinding. 相似文献

Wheat germ flour (WGF) has been developed as a functional food ingredient with high nutritional value. In this study, WGF was applied in steamed bread-making in order to improve the quality of Chinese steamed bread (CSB). Partial substitution of wheat flour with WGF at levels of 3%, 6%, 9% and 12% (w/w) was carried out to investigate physicochemical properties of blends and their steaming performance. Falling number (FN) values of composite flours ranged from 199 to 223 s. Viscosity analysis results showed that wheat flour mixed with WGF had higher pasting temperature and lower viscosities. Dough rheological properties were also investigated using farinograph and extensograph. The addition of WGF diluted the gluten protein in dough and formed weak and inextensible dough, which can be studied by scanning electron microscope (SEM) analysis. CSB made with WGF had significantly lower volume, specific volume and higher spread ratio. The sensory acceptability and physicochemical quality of CSB were improved with the application of a low level of WGF (3% and 6%). However, results showed that a high level of WGF over 9% is not recommended because of unsatisfactory taste. As a whole, addition of appropriate level of WGF in wheat flour could improve the quality of CSB. 相似文献

为给黄土高塬沟壑区道路排水沟水土流失测算及其防护提供科学依据,采用野外原位放水冲刷试验方法,在放水流量10~50 L·min-1和坡度4°~10°条件下,对土质道路裸露排水沟和植被排水沟的侵蚀产沙规律进行试验研究。结果表明:放水流量和坡度增大,裸露和植被排水沟的径流含沙量和土壤剥蚀率均成倍数增大,与放水流量呈显著指数函数关系;同一试验条件下,裸露排水沟的径流含沙量和土壤剥蚀率分别是植被排水沟的1.3~1.7倍和1.4~2.2倍。放水流量和坡度对裸露排水沟径流含沙量的影响较为接近,而植被排水沟径流含沙量主要受放水流量影响;不论裸露还是植被排水沟,放水流量对土壤剥蚀率的影响都远大于坡度。 相似文献

为探究城市湖泊浮游动物群落结构特征和分布与水环境因子之间的关系,并评价南昌市典型城市湖泊夏季水质状况,运用多维尺度分析(MDS)和典范对应分析(CCA)方法,对南昌3个城市湖泊———东湖、青山湖、月亮湖的轮虫和甲壳类浮游动物群落进行了研究,分析了浮游动物的多样性指数。结果表明,轮虫是夏季城市湖泊中浮游动物的优势类群,优势度(Y)大于0.02的浮游动物分别为剪形臂尾轮虫(Brachionus forficula)、裂足臂尾轮虫(Brachionus diversicornis)、萼花臂尾轮虫(Brachionus calyciflorus)、桡足类无节幼体(Copepoda nauplii)和卜氏晶囊轮虫(Asplanchna brightwelli);3个湖泊之间浮游动物的群落结构差异显著(P <0.05),明显划分为东湖群落、青山湖群落和月亮湖群落。叶绿素 a 浓度、浊度和溶氧是浮游动物分布的显著影响因子(P <0.05)。多样性指数评价显示,东湖为清洁型水体,青山湖为清洁-中污型水体,月亮湖为轻污-中污型水体。综合评价表明,东湖和青山湖水体为寡营养水平,月亮湖为中富营养水平。 相似文献

A feeding trial was conducted to assess the nutritional values of canola meal as a substitute for fishmeal in diets for kuruma shrimp using five isocaloric diets (190 kJ kg?1) prepared by replacing 0%, 10%, 20%, 30% and 40% of fishmeal protein with canola meal protein in CM0, CM10, CM20, CM30 and CM40 diets respectively. Triplicate groups of juveniles (0.19 g) were fed the respective diets for 60 days in tanks. At the end of trial, weight gain (%) and specific growth rate (% day?1) were not significantly (P > 0.05) different among shrimp fed CM0, CM10 and CM20 diets. However, growth was significantly (P < 0.05) decreased in shrimp fed CM30 and CM40 diets. As with growth performance, feed intake, feed conversion ratio and protein efficiency ratio were also decreased (P < 0.05) in CM30 and CM40 groups. Whole body dry matter, methionine and proline were significantly decreased with canola meal substitution levels. In general, retention efficiency of protein and indispensible amino acids were decreased as canola meal increased in diets. It may be concluded that 20% fishmeal protein can be successfully replaced with canola meal, while supplementation of amino acids or blending with complementary proteins could facilitate higher fishmeal replacements in kuruma shrimp diets. 相似文献

针对华北平原小麦生产水资源高耗与存量极度稀缺的问题,通过河北省两地大田试验,研究了全田土下微膜覆盖与不同灌水管理对冬小麦水分利用和物质生产效果的作用。结果表明,土下微膜覆盖条件下,冬小麦雨养或少量灌水消耗了占常规生产(对照) 2/3~3/4的耗水量,生产了不少于7500 kg hm-2的籽粒产量;籽粒产量水分利用效率达到24.8~26.5 kg mm-1 hm-2,较对照提高28.3%~41.0%。与对照相比,生物产量水分利用效率高峰由抽穗扬花期提前至拔节期,且提高1.3~2.7倍,雨养或少量灌水还可有效提高小麦收获指数。土下微膜覆盖下的土壤贮水消耗速度变缓,2 m土体贮水量播种时不小于600 mm就可满足小麦的全生育期耗水,壤质土壤供水量为212.2 mm,黏质土壤供水量为230.0 mm。土下微膜覆盖下,雨养或扬花前少量灌水能够显著促进花后20 d内的光合速率,蒸腾速率减小同步显著提高光合水分利用效率,但在灌浆中期灌水则对提高光合速率及光合水分利用效率无意义。在华北平原,全田土下微膜覆盖雨养或适时少量灌水是大幅降低小麦耗水和提高水分利用效率,保证小麦产量的有效方法。 相似文献

An N-balance experiment was conducted to test the hypothesis that d-Methionine (d-Met) has the same bioavailability and efficacy as l-Methionine (l-Met) when fed to weanling pigs. A Met-deficient basal diet containing 0.24% standardized ileal digestible (SID) Met was formulated. Six additional diets were formulated by adding 0.036%, 0.072%, or 0.108% d-Met or l-Met to the basal diet, and these diets, therefore, contained 77%, 87%, or 97% of the requirement for SID Met. Fifty-six barrows (10.53 ± 1.17 kg) were housed in metabolism crates and allotted to the seven diets with eight replicate pigs per diet. Feces and urine were collected quantitatively with 7-d adaptation and 5-d collection periods. Blood and tissue samples from pigs fed the basal diet and pigs fed diets containing 0.108% supplemental Met were collected on the last day. Results indicated that N retention (%) linearly increased (P < 0.01) as supplemental d-Met or l-Met increased in diets. Based on N retention (%) as a response, the linear slope-ratio regression estimated the bioavailability of d-Met relative to l-Met to be 101% (95% confidence interval: 57%–146%). The villus height and crypt depth in the jejunum were not affected by the Met level or Met source. Total antioxidant capacity or thiobarbituric acid reactive substance concentrations in plasma or tissue samples from pigs fed the control diet or diets containing 0.108% supplemental d-Met or l-Met were not different. Abundance of mRNA for some AA transporters analyzed in intestinal mucosa of pigs also did not differ. Therefore, it is concluded that d-Met and l-Met are equally bioavailable for weanling pigs. 相似文献
